Basic things are unpacked and I think we are settled! Whew!

The best part of writing a blog about baking treats, is that they enjoy eating them!
On Monday, I shared some Pizzelle Cookies. I made these Ice Cream Tacos with the cookies.
I hope you like them! My family did :)
A great thing happens in the summertime - the Ice Cream Man returns!
Our Ice Cream man comes around on Sunday evenings selling his yummy Popsicles, delicious Chipwiches, and ChocoTacos. We usually end up buying one of each. I've made Ice Cream Cookie Sandwiches before, so I thought I would try my had with a ChocoTaco.
When I was making my Pizzelle Cookies, I decided that the soft cookies could be formed into a taco shell shape and filled with ice cream. I had to give it a try.
First up, make the Pizzelle Cookies and form them. I used small boxed as the drying rack. It only takes a few minutes for the shell to completely cool and harden.
At first, I wanted to recreate a ChocoTaco, but where is the fun in that? I wanted to go all out and make a few different flavors.
You'll need the following:
Fresh Pizzelle Cookies
Ice Cream - your favorite flavor
Spreads - chocolate fudge, caramel, peanut butter, basically anything that suits your fancy!
Melted chocolate chips
Garnishes - cookie crumbles, dried fruit, nuts, candy, you get my drift...
I made a few with Biscoff spread smothered over the inside of the shell.
Then I crushed up a few cookies and mixed it into some softened vanilla ice cream and stuffed the shell!
Finally, I topped it with some melted chocolate chips and more cookie crumbs.
So yummy and decadent!

Then I went for the Chocolate Peanut Butter! Smothered that all over the inside of the shell. Mixed in some mini chocolate chips and topped it with chocolate and peanuts!
A Peanut and Chocolate dream come true!
Finally, I just added some fudge to the shell, filled it with ice cream, topped it with the chocolate and covered it with coconut flakes!
Honestly, I think the combinations are endless!
Adding the melted chocolate was a bit difficult. I had to work quickly to avoid melting.
At first I tried to drizzle it over, but that was a huge mess.
Then, I tried to dip the top of the taco, but again, that was messy.
Finally, I just spooned on the chocolate and then wrapped the taco in plastic wrap and put it back in the freezer to harden.
